Happy Shrove Tuesday! Today I'm sharing the recipe I use to make my pancakes, plus my secret ingredient - those of you who read the Romantic Gal Society newsletter may already know! These
are my favourite thing to whip up at the moment as they are so easy to make and we almost always have the right ingredients in. I added nutella as a special treat for Pancake day - plus it's Oscar's favourite!

My secret ingredient is almond essence. Adding this to my pancakes means they taste a lot like battenburg cake, so moreish and perfectly compliments the salt - sweet flavour. It also means I can make sweet pancakes and not even have to use as much sugar, saving on calories too! Here is the recipe I use.


All you will need is 1.3 cups of flour, two tablespoons of sugar, 130mls of milk, two and a bit tablespoons of marge/butter, one egg, one tsp of baking soda and optional almond essence, no scales required and you might have all the ingredients hidden in your cupboard already! The mixture you make will be quite thick, so is a bit of trial and error experimenting with how much to cook in the pan at one time.

Once you ladle the mixture in, immediately begin to spread it out and around in a circle shape, so the thickness is relatively even on all sides. Cook until a lovely golden brown hue and then flip over and repeat on the other side. I love to spread on a little slightly salted butter or margarine when hot, so it melts in, and then sprinkle them with sugar, so tasty.
I would love to try tossing in a handful of blueberries and making sweet pancakes with no sugar, but these are my favourite to make. I love how fluffy they are, like Scotch pancakes! Mmm can't beat Easter eggs either, I just love this time of year haha. Pancakes, chocolate and lambs in the fields!

ReplyDeleteCan you believe I never had pancakes this year? So unlike me because pancakes are one of my fave foods and it's one of the only things I can cook well. I usually go for good old golden syrup but if these are as sweet as you say, maybe a sprinkle of sugar might be all it needs!
