Not one to forget pancakes but what can top a tasty Italian supper by the fire?
I know I promised something different and a little more challenging for this last 'baking Sunday' but a family occasion cropped up and took over most of my weekend. Wish me luck for next week xD I do, however, still have a baking treat for you - after raiding my cupboard I gathered enough ingredients for a good Italian Biscotti loaf - or what do they call it in biscuit form? I was intrigued to try this as I fall head over heels for Italian dishes, and as a dedicated fan even made some coffee to accompany it!
Biscotti is like a yummy sort of sliced biscuit loaf that can be made easily in a biscuit recipe, adding things like cherries, nuts and chocolate for flavour. Dark cherries and hazelnuts are supposed to go well together and I chose dark chocolate and pistachios for mine. I used chocolate squares instead of chips which melted really nicely (so if you take a bite you get a nice explosion of chocolate) The biscuit is quite crumbly and sweet, the chocolate adding warmth and pistachios flavour. Couldn't resist melting the spare chocolate and drizzling it over the top...
A bit carried away maybe?
